Bowl of Korean-Style Beef Barbecue Rice

What You Need:

  • 1/2 kilogram beef roast in au jus, heated
  • 1/4 kilogram jasmine rice, cooked
  • 1 clove garlic, finely chopped
  • 4 cups baby spinach
  • 2 cups shredded carrots
  • 1 cup button mushrooms, quartered
  • 2 tablespoons plus 1 teaspoon of Korean barbecue sauce
  • 1 tablespoon water
  • 1 tablespoon vegetable oil, divided
  • 1 teaspoon fresh ginger root, chopped

In a pan heated with 2 teaspoons of vegetable oil, sauté the mushrooms until soft, about 3 to 4 minutes. In a bowl, mix the meat with 1 teaspoon of barbecue sauce. Set aside. Stir garlic, spinach, and water in the same skillet until the vegetables are fully cooked. Transfer to an individual bowl. Carrots and ginger are cooked for one minute in the remaining oil in a pan. Divide the rice between four bowls. Likewise, divide the steak and veggies among four bowls and sprinkle each with the leftover barbecue sauce.

Rice Bowl with Slow-Cooked Chicken Barbecue

What you require:

For the grilled chicken, you will need four boneless, skinless chicken breast halves, one bottle of barbecue sauce, half a cup of Italian salad dressing, half a cup of brown sugar, and two tablespoons of Worcestershire sauce.

For the rice bowl: 1/4 kilogram of cooked white rice, 3 chopped onions, 2 cups of black beans, 1 1/2 cups of your preferred shredded cheese, 1 cup of corn kernels, 1 cup of salsa, and 1 cup of ranch dressing.

In a bowl, combine two-thirds of the bottle of barbecue sauce with salad dressing, brown sugar, and Worcestershire sauce. Stir to thoroughly blend ingredients. Pour the mixture over the chicken breasts placed in the slow cooker. Cook for three to four hours on high or six to eight hours on low. When the chicken is done, take it out of the slow cooker and drain the liquid. Put the chicken that has been cut up back into the slow cooker. Pour the rest of the BBQ sauce over the meat and mix it well. To assemble rice bowls, add rice in serving bowls and top with barbecue chicken cooked over low heat. In separate dishes, divide the onions, black beans, and corn. Add salsa, ranch dressing, or both to the top. Serve without delay.
